Our Between-Two-Seas 2005 results from 70% Sauvignon 20% Sémillon 10% Muscadelle having drawn all their qualities in a soil of silts, sandy clays as well as low registers with hillsides.
As of harvest, the bays are in a hurry then the juices are assembled and vinified together
The best in a hurry ones are selected thanks to a pneumatic press which allows a soft pressing of bays. Then the wine making is led between 17 and 19°C in order to preserve the fragile flavours characteristic of the white wines. With this temperature, alcoholic fermentation lasts 3 weeks.
With tasting, the ENTRE-DEUX-MERS Château LA COURTIADE PEYVERGES 2005 is characterized by a nice limpid yellow dress rather pale with the light green reflections.
